Designed to determine the quality of the gluten of wheat grain and wheat flour by measuring its elastic properties. When exposed to the sample of gluten for 30 seconds, the device determines its ability to resist the deforming load of compression and expresses the result in units of IBC with an error of 0.5 conventional units of IBC.
